Both GIF and JPEG are raster image formats, but they handle pixel data differently. GIF stores images using lossless compression with a limited palette of up to 256 colors, whereas JPEG is a lossy format supporting millions of colors. When you convert GIF to JPEG, the image transitions from a lossless structure to a lossy one, and part of the color data is discarded to optimize the compression algorithm.
